A school food specialist is a trained professional who prepares healthy, scratch-made meals for students in K-12 schools. They combine culinary skills with knowledge of nutrition, food safety, and large-scale meal production to create menus that meet state and federal guidelines while supporting children’s health and learning. Unlike traditional cafeteria roles, School Food Specialists emphasize fresh ingredients, culturally responsive recipes, and sustainable practices—helping schools deliver nutritious meals that fuel student success and align with initiatives like Colorado’s Healthy Meals for All program.

This one-year registered apprenticeship program provides hands-on experience over a full school year in school kitchens. Apprentices gain practical skills through on-the-job learning, supported by online courses from the Institute of Child Nutrition and the Chef Ann Foundation’s School Food Institute. In addition to coursework, participants take part in live virtual learning sessions with scratch-cooking and school food experts, and they have opportunities to connect and network with other school food professionals across the country.
